Use open QCm wi2 without lid
Is it possible to use the open QCM wi2 without the lid?
Does the crystal holder only need to be electrically connected to the 2 terminal points on the PCB
Would it also work externally, like in the 2nd picture (if we would connect the terminals to the holder)

absolutely yes. You can use the sensor without a lid. You will observe only a noise increasing due to the sensor exposition to the external environment.
On the other hand, you can also use your own sensor head by wiring it to the main electronics. Pay attention does not use wires too long and it is preferable to shield the connection to GND.
Anyway, the pictures show the openQCM V1 and not Wi2 ;-)
